Turmeric Ginger Oats
Yield: 2 serving
Ingredients:
3/4 cup organic rolled or old fashioned oats
3/4 cup water
3/4 cup milk of choice
1/4 tsp ground cinnamon
1/4 tsp ground cardamom
1/4 tsp ground turmeric
1 pinch of black pepper (increases turmeric’s bioavailability)
1/2 tsp fresh grated ginger (or sub 1/4 tsp ground ginger)
1/2 tsp maple syrup for sweetness (optional)
Add-in: 2 pitted dates diced or 2 tsp of raisins, 1 tbsp of pepitas or any other seed
Top with 2 tsp unsweetened coconut flakes (1 tsp per bowl)
Instructions:
Pour water and almond milk into a small saucepan and bring to a simmer.
Add oats and bring to a low boil while stirring occasionally.
Add spices and stir.
Chop dates into small pieces and add to the oatmeal along with your desired seeds. Mix.
Cook for 5-7 minutes (depends on your stove and pot). Most of the liquid should be absorbed and the oats should be soft. If you like a soupier consistency, add more water or almond milk.
Top with unsweetened coconut flakes.
Cool and enjoy.
