Roasted Sweet Potato with Tahini
This is by far my favorite afternoon snack to help me make it from lunch to dinner. The roasted sweet potato is grounding, caramelized, and soft. The tahini or nut butter adds a satiating amount of protein and fat. And of course, a little bit of uplifting sweetness from the maple syrup.
Yield: 1-2
INGREDIENTS:
1 sweet potato
1 tsp ghee or coconut oil
2 Tbsp tahini (or nut butter)
2 tsp maple syrup
Sprinkle of salt
INSTRUCTIONS:
Preheat oven to 375 degrees F.
Cut a sweet potato in half and coat it in ghee or coconut oil. Place it skin side down on a cookie sheet.
Roast sweet potato for 35-40 minutes until golden brown and caramelized.
Softly mash the flesh with a fork and add a scoop of tahini (or nut butter) to each half. Drizzle maple syrup and sprinkle with salt.
