Black Bean Brownies

Having a sweet craving but trying to keep it healthy? These will fix your sweet tooth without the guilt. Not to mention…they are filled with good fiber and filling protein.

YIELD: 9-12 brownies

INGREDIENTS:

-1 can black beans (rinsed) 10oz

-2 pasture raised eggs

-3 tablespoons of coconut oil (melted)

-1/2 cup coconut sugar

-3/4 cup unsweetened cocoa powder

-2 tsp baking powder

-1.5 tsp vanilla extract

-1.5 tsp cinnamon 

INSTRUCTIONS:

Rinse the beans well. Sift dry ingredients. Combine all ingredients in a food processor (liquid on the bottom is best.) Blend until smooth. Pour into an oil coated baking pan and bake for 20-30 minutes at 350 degrees. Take out of the oven when the center is still semi-soft if you like them gooey ;)
