Protein Pancakes

These are my new obsession. So delicious, filling and super easy!
 I originally found the idea from Joe Wicks, The Body Coach. But I have adapted them with my own little twists. Enjoy!

YIELD: 1-2 servings

INGREDIENTS:

- 1 pasture raised egg

- 1 scoop of protein powder

- 2 Tbsp of organic rolled oats

- 1/2 tsp cinnamon

- 1/4 tsp nutmeg

- 1 soft banana (peeled and broken into pieces)

INSTRUCTIONS:

  1. Place all the ingredients in a blender.

  2. Blend until smooth. Heat up coconut oil in a large pan (medium high heat).

  3. Once the oil is hot, drop in the pancake mix - I drop a little less than 2 tbsp of mix per pancake.

  4. Turn the heat down to low heat once the pancakes are dropped.

  5. When the pancakes begin to bubble around the edges, flip them quickly with a spatula.

  6. Give them about another minute or so until light/medium brown.

Then stack them on a plate. I like to drizzle them with some local honey, dried coconut, a scoop of greek yogurt and any season fruit. I paired mine with raspberries and peaches in the above picture. Sometime I will bake an apple with coconut oil and cinnamon and pair it with that as well. Whatever you are craving in the moment :)
