Protein Pancakes
These are my new obsession. So delicious, filling and super easy!
I originally found the idea from Joe Wicks, The Body Coach. But I have adapted them with my own little twists. Enjoy!
YIELD: 1-2 servings
INGREDIENTS:
- 1 pasture raised egg
- 1 scoop of protein powder
- 2 Tbsp of organic rolled oats
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1 soft banana (peeled and broken into pieces)
INSTRUCTIONS:
Place all the ingredients in a blender.
Blend until smooth. Heat up coconut oil in a large pan (medium high heat).
Once the oil is hot, drop in the pancake mix - I drop a little less than 2 tbsp of mix per pancake.
Turn the heat down to low heat once the pancakes are dropped.
When the pancakes begin to bubble around the edges, flip them quickly with a spatula.
Give them about another minute or so until light/medium brown.
Then stack them on a plate. I like to drizzle them with some local honey, dried coconut, a scoop of greek yogurt and any season fruit. I paired mine with raspberries and peaches in the above picture. Sometime I will bake an apple with coconut oil and cinnamon and pair it with that as well. Whatever you are craving in the moment :)
