Soft Almond Flour Chocolate Chip Cookies
I’ve been making these babies on repeat all summer. I also love that they are refrigerated because it satisfies my healthy sweet tooth and my craving for cooler things in the summertime.
YIELD: 16 cookies
INGREDIENTS
4 tbsp. Melted ghee or grass-fed butter
1/3 cup coconut sugar
3 tbsp. ground flaxmeal
4 tbsp. water
1.25 cup almond flour
1/4-1/3 cup dark chocolate chips
1 tsp. baking soda
Scant 1 tsp of salt
INSTRUCTIONS
Preheat oven to 350 degrees F
Make flax egg (3 tbsp flax meal with 4 tbsp of water). Let is sit on the counter. I have also tried using a regular egg and it works too!
Melt butter. Then beat in sugar.
Add flax egg (or regular egg). Mix until incorporated.
Mix dry ingredients: almond flour (spoon into dry measuring cup and level), baking soda, and salt.
Add dry ingredients incrementally to the wet mixture.
Mix until smooth.
Fold in dark chocolate chips
Scoop 1 tbsp balls onto a cookies sheet lined with a silicone baking mat (or parchment paper).
Optional: Flatten cookies with the back of a fork (they do not expand much so this will be there shape).
Bake ~14 minutes.
Cool and then store in an air tight container in the fridge.
