Banana Oatmeal Chocolate Chip Cookies
Yield: 15-17
INGREDIENTS:
2 large ripe bananas mashed
1.5 cups of oat bran or oat flour
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp vanilla
1/2 cup chocolate chips
INSTRUCTIONS:
Mash bananas.
Add oat bran, vanilla, baking soda, and salt.
Mix until the batter resembles a paste.
Fold in chocolate chips.
Scoop 1 tbsp of batter and place 1 inch apart on a lined cookie sheet.
Push them down with the back of a fork and reshape into a cookie shape (they don’t expand or change shape much so keep that in mind).
Bake at 350 for 13-14 minutes until the edges are golden brown. Cool for 10 minutes on the hot tray and enjoy!!
IMPORTANT TIP: I store these in a airtight container in the fridge, I find they keep better that way.
