Chocolate Cashew Cardamom Cups


For a little bit of sunshine in your day 🌞

INGREDIENTS:
1 cup of chopped cocoa butter (food grade of course)
2 TBSP coconut oil
3/4 cup of cocoa powder
1 TBSP maple syrup (can add more if you like it sweeter!)
1/4 tsp vanilla extract
12 whole cashews
Flakey sea salt and ground cardamom to sprinkle on top

INSTRUCTIONS:
Make a double boiler and melt coconut oil. Then add chopped cocoa butter. Stir until melted. Remove bowl from double boiler and add in cocoa powder (sifted if possible). Whisk ingredients together. Add maple syrup, and vanilla extract. Whisk again and taste to adjust the sweetness as preferred. Line 12 mini baking cups into a muffin pan. Pour chocolate mixture into cups about 3/4 of the way. Add 1 cashew in the center of each. Sprinkle with salt and ground cardamom. Refrigerate until hard (~15/20 mins). Store in the refrigerator.
